Les vins de Fontfroide, based in the former barn of the eponymous Abbey, Saint Julien de Septime, at the entrance to Fontfroide, manages the vineyards of this jewel of Romanesque architecture. In the heart of an exceptional landscape protected by the Corbières hills, Fontfroide wines carry the secrets of 1,000 years of history. Initially made to provide each monk with the daily ration recommended by the rule of Saint Benoît, these wines gradually became imbued with the values of the men who produced them: traditional vineyard work, sharing in hospitality and, of course, spirituality.
The terroir of Fontfroide is very special, distinguished by its freshness. The name comes from the Latin fons frigidus, meaning "cold fountain". The massif has springs that once fed the abbey, and are still active today. They produce less than in the past, but create cool underground currents. This natural water reserve and the coolness of the soil give our wines their typical fruitiness, finesse and freshness.
Since 2004, the estate has been run by Laure de Chevron Villette, great-granddaughter of Madeleine and Gustave Fayet, who saved Fontfroide from planned dismantling.
