In the heart of the Pyrenees, on the way to the church in Estaing, there’s a place you don’t really go looking for— but one you never regret finding: the first craft microbrewery in the Val d’Azun.
Dominic and Hélène weren’t looking for a space—they were looking for a place. They gazed at the mountains, breathed in the fresh air, listened to the Gaves flowing down from the mountain passes… and decided that this was where Le Siboire would take root.
Born out of a transatlantic collaboration with Le Siboire in Sherbrooke (Quebec), the microbrewery has been open since May 2026.
Here, the Pyrenees aren’t just a backdrop—they’re the very reason the place exists. At Siboire, you walk into the brewery as if you were walking into someone’s home: with the feeling that you’re welcome to stay.
