In the Cité de Carcassonne, Jérôme Ryon heads up the kitchens of the gastronomic restaurant La Barbacane and the Hôtel de la Cité, jewels in the crown of upmarket hotels in the south of France.
The Michelin-starred chef, winner of the Prix Culinaire International Pierre Taittinger in 2005, offers an experienced cuisine combining precise gestures and exceptional regional produce. Originally from Bourg-en-Bresse, he has been an adopted Occitan for over 22 years, and thanks to a network of producers and fishermen he knows how to surround himself with, he selects the best that nature has to offer. His menu is regularly updated, in line with the seasons, his visits to the fish auction and the suppliers of sustainable and responsible agriculture with whom he has forged close ties.
Jérôme works with his teams to personalize the encounter between rigor, masterful cooking, respect for techniques and his own creativity. The result is dishes that are balanced, clear, harmonious and generous.
