Les Pleurotes de Verdun

A small mushroom farm has been set up in the underground galleries of the Citadelle de Verdun, an area steeped in history - notably used during the First World War - to grow oyster mushrooms (mainly grey oyster mushrooms). It's an innovative way of showcasing this architectural heritage while producing a fresh, local food product.
The underground facilities provide a stable microclimate with cool temperatures (around 10?15°C) and constant humidity, naturally reproducing the ideal autumn conditions for oyster mushroom growth. As a result, oyster mushrooms can be grown almost all year round, with little need for additional energy.
The project, run by local entrepreneurs (including Florian Montes and Jean-Pierre Gonda), now produces a significant quantity of oyster mushrooms every week. These mushrooms are then sold locally to farmers' stores, greengrocers and local restaurateurs.
It's also possible to take a guided tour of the site (under the name Castel Mycélium), which combines the history of the citadel with a visit to the mushroom farm. At the end of the tour, you can buy fresh oyster mushrooms directly on site.
