In addition to being James Bond's favorite champagne, Bollinger has two parcels that resisted phylloxera without being replanted with American rootstock. Located in Aÿ, Chaudes Terres and Clos Saint-Jacques are still cultivated the old-fashioned way - plowing with draft horses and weeding with sheep - and produce a vintage Vieilles Vignes champagne.
